Josh McIlvain My favorites are Salmon (its kinda buttery), Yellowtail (also a bit fatty), and Red Snapper (interesting tang to that one). A good one for a novice to try is the Philadelphia Roll. It's been known (depending on the chef) to contain salmon, cucumber, avocado, and cream cheese wrapped in rice wrapped in seaweed.
